Ingredients
4 cups milk
1/2 cup butter or margarine2 cups grits (not instant)
2 cups mild cheddar cheese (grated)
1/3 cup grated Parmesan cheese
Salt and Pepper to taste
Directions
Put milk in large pot. Cut margarine in several pieces and add to milk. Add salt and
pepper to taste. Stir occasionally to keep milk from sticking. Bring to boil and gradually
stir in grits. Bring to boil again and then turn on low heat, stirring continuously, until grits
are the consistency of soft mashed potatoes. Remove from heat and add 2/3 cup of the
cheddar cheese and mix until cheese is melted throughout the grits.
Put in greased casserole dish.
Sprinkle rest of cheese on top and then sprinkle with parmesan cheese.
Bake 350° degrees for about one hour.
Makes 1 1/2 quart casserole.
Can be doubled
Can be made ahead of time and frozen- thaw and then cook.
