Here is the Italian Christmas Cookie Recipe:
1 Ib margarine 1 1/8 cups sugar
1/2 lb ground
pecans 1/4 teaspoon
vanilla
4 cups flour 2 egg yolks
Powdered sugar
Cream butter and sugar together. Add beaten egg yolks and vanilla. Add flour gradually. Fold in nuts. Drop by level teaspoons on a cookie sheet. Bake at 370 degrees for 15 minutes.
I put newspaper on my island and cover that with wax
paper. Cover the wax paper with sifted
powdered sugar. Place the hot
cookies on the paper and cover them with more powdered sugar. Let the cookies dry for several hours before storing in a covered
cookie tin. I remember my mother making huge batches of these cookies to mail to Herb, your mother,
Steve in the Navy, etc. They would be
drying on every flat surface in her kitchen and dining room. When I came home from school as a child and
saw the cookies, I knew Christmas was almost here. This recipe makes a lot of cookies, so I have
cut it in half before. (Her recipe
originally called for oleo).
